i usually use saddle soap and then a protective oil for leather.

Well, there are several you could use. I like Hall's oil myself. Neats' foot oil will soften and slightly change the colour. Saddle soap will soften. Ask at the Tack Shop what they'd use for your specific problem.

Neatsfoot oil, will soften the leather and also darken it, so will baby oil. you can get dyes to add to neetsfoot oil that will darken the leather more,
We always used saddle soap first, then followed with Neatsfoot oil. I had one saddle that was close to 100 years old and rode it several times every week.
Neatsfoot oil or olive oil.
neat's foot oil makes it change color more then it makes it soften, but saddle soap works really well in softening leather, and it also darkens the leather slightly, but not as much as neat's foot oil
